Welcome to our second edition of how to prepare different varieties of delicacy. We talked about cakes in our last edition but today, we shall be talking about how to prepare Rice. Ask an average youth if he can prepare rice and you should get a yes answer. The most popular type of rice recipe among youths is the concoction because they consider it faster and pocket friendly.

We should all know that there are different recipes of rice which include jollof rice, fried rice, ofada rice and so on. We bring you the steps on preparing this foods and guess what? They are fast and pocket friendly. Enjoy!

Coconut rice

For this, you will need;


3 cups of rice

Tomato stew 500mls

Seasoning about 3 cubes

Onions 1 or 2

Salt

Chicken(for maximum enjoyment..yummy)

Coconut milk 600mls

Pepper

Thyme 1 teaspoon

Steps

Extract the coconut milk and set aside

Prepare your tomato stew which is done as follows

Wash and blend plum tomatoes and make sure the seeds are well blended

Cut onions into small pieces and set aside

Mix your tomato paste (gino, pomo and co) to make it soft

Pour the fresh tomato earlier blended into a pot and cook at high heat till the water is much dried

Add much vegetable oil, the tomato paste you mixed earlier and the chopped onions and stir well

Fry at low heat and stir occasionally till the vegetable oil is separated.

When you are satisfied that the raw tomato taste is gone, your tomato stew is ready

Remove the excess oil which can be used later to cook.

If you are using chicken, boil it with onions, seasoning cubes and thyme. When done, sieve to remove the water and then fry lightly

Parboil your rice and put in a sieve

Put an empty pot big enough to contain the parboiled rice on fire and pour the coconut milk, tomato stew, chicken and the grinded pepper in the pot.

Add the parboiled rice to the pot and top up the pot with water suitable to make the rice edible.

Leave to cook till done and you are ready to go!

Fried rice

You will need;

3 cups of rice

1 teaspoon of thyme

3 seasoning cubes

2 big onions

Salt

Vegetable oil

Chicken

Cow liver

Curry powder

Green beans

Carrots

Steps

Prepare the vegetables by

Washing, scraping and cutting the carrots into tiny cubes, cut the green beans to small pieces. Soak all these separately in hot water for 5 minutes. Cut 1 onion and set aside.

Prepare the liver by

Cooking till done and cut into tiny pieces,

Prepare the chicken as stated in coconut rice.

Parboil the rice as stated in coconut rice

Pour the chicken into a sieve to remove traces of cooked onions, thymes and so on. Pour the chicken into a pot and set to boil. Add the parboiled rice with 1 teaspoon of curry. Top up with water enough to cook the rice well but don’t add too much of water.

Pour the rice into a bowl to cool down. Divide the prepared vegetables, cow liver and rice into 4 to 6 parts separately.

Pour small amount of oil into a frying pan. When hot, add diced onion and stir for 10 seconds, followed by 1 part of the diced liver, diced vegetables and 1 part of the rice. Repeat this process for the other parts. You can add salt and curry if necessary. You are then good to go. It can be served with salad, moi moi or coleslaw.

  Jollof rice

To prepare this, just repeat the steps for coconut rice, omitting the coconut milk parts.

Tuwo Shinkafa

For those who don’t know, tuwo is a rice recipe and is easy to prepare. You will need;

Short grain rice

Water

Steps

Rinse the rise and put in a sizable pot

Pour enough water to cook the rice into the pot and cook

When the water dries up, check the rice texture by mashing with your hands. If you feel any form of resistance, add a little bit water and cook till no resistance is felt or that the rice melts easily when pressed.

Mash the soft rice with a wooden spatula in the pot till a mass of tuwo is formed.

Serve with any soup of your choice and remember to cover them with plastic films to prevent the tuwo from drying up.
