Cake
Most
people would want to bake a cake but the problem is based on which type of
cake, ingredients to use and mostly how to bake the cake. Under this sub topic,
we shall discuss about various kinds of cake and how to prepare them. We hope
you find this useful.
Lemon drizzle cake
For this type of
cake, you will need;
Ø 225grams of
caster sugar
Ø 225 grams of
unsalted butter
Ø 4 eggs
For the topping;
Ø Juice 1 and half
lemons
Ø 85 grams of
caster sugar
Steps
to follow
Ø Heat the oven.
Ø Mix the 225grams
of unsalted sugar and the 225grams of caster sugar until it is creamy and
pastel.
Ø Add the 4 eggs
one at a time to the pastel mixture and slowly mix together.
Ø Sift in 225grams
of flour and add finely grated zest (small pieces of the skin of lemon) of 1 lemon and mix well.
Ø Prepare your
loaf tin either by lining the inside with small butter or with grease proof
paper and put in the mixture.
Ø Bake for 50
minutes.
Ø When the cake is
cooling, mix the juice of 1 and half
lemons and 85grams of caster sugar to make the drizzle.
Ø Prick the warm
cake with fork then pour the drizzle.
The juice will sink in and the sugar will form a beautiful crisp topping.
Ø Leave the cake
until it is completely cool and then serve.
Vanilla cake
For
this type of cake, you will need;
Ø 5 cups of
unsalted butter
Ø 1.5 cups shifted
cake flour
Ø 2 large eggs
Ø 5 cups of whole
milk
Ø 1.5 cups
teaspoons baking powder
Ø 25 teaspoons of
salt
Ø 1 cup of sugar
Ø 5 teaspoons of
vanilla extract
Methods
to follow
Ø Heat the oven
Ø Sift the cake
flour, baking powder and salt into a large mixing bowl.
Ø Beat in the
butter slowly and mix thoroughly with a mixer
Ø Beat in the
sugar slowly and mix thoroughly with a mixer
Ø Beat in the eggs
one at a time and mix thoroughly with a mixer
Ø Beat in the
vanilla and milk and mix.
Ø Be careful not
to over mix.
Ø Pour into the
prepared pan (your loaf tin either by lining the inside with small butter or
with grease proof paper) and bake for 35 to 40 minutes.
Ø Cool the cake
and serve with or without icing.
Chocolate
cake
For
this type of cake, you will need;
Ø 200grams of dark
chocolate
Ø 85grams of plain
flour
Ø 85grams of self
raising flour
Ø 200grams of
butter
Ø 1table spoon of
instant coffee granules
Ø 3 medium eggs
Ø 75ml of
buttermilk
Ø 25grams of cocoa
powder
Ø 200grams of
golden caster sugar
Ø ¼ tablespoon of bicarbonate soda
Ø 200grams of
light muscovado sugar
For the frosting
Ø 200grams of dark
chocolate
Ø 2 tablespoon of
golden caster sugar
Ø 284ml of carton
double cream, the pouring type.
Method to follow
Ø Choose your
preferred pan(rectangular or circular shape) and prepare it(either by lining
the inside with small butter or with grease proof paper)
Ø Break 200grams
of dark chocolate into bits or pieces into a heavy based pan and cut in
200grams of butter and add to the pieces of chocolate in the pan.
Ø Mix 1 tablespoon
of instant coffee granules into 125ml to 128ml of cold water and add it to the mixture
above.
Ø Warm the mixture
above for about 3 to 5 minutes until everything is melted. Be careful not to
overheat and remember to stir half way through.
Ø As the chocolate
melts, mix 85grams of self raising
flour, 25grams of cocoa powder,200grams of golden caster sugar, ¼ tablespoon of bicarbonate soda, 85grams
of plain flour and 200grams of golden caster sugar in a big bowl. Mix well preferably
with your hand to avoid any lump.
Ø Add 3 eggs and
stir in 75ml of buttermilk in a separate bowl.
Ø Add the melted
chocolate to the flour mixture above and the egg mixture. Stir till everything
is well blended together.
Ø Pour into your
prepared tin and bake for about 1hour 30minutes to about 1 hour 35minutes.
Ø After the cake
is cold, cut it horizontally, preferably into three.
Ø Prepare the
frosting like this;
Ø Cut 200grams of
dark chocolate into small pieces and pour into a bowl.
Ø Pour 284ml of
double cream into a pan and ass 2 tablespoon of golden caster sugar and heat
until it is about to boil.
Ø Take off the
heat and pour it on the chocolate and stir until the mixture is smooth.
Ø Place the layers
of cake together adding the frost to each side. Pour the rest of the frost on
the cake and you are ready to go!
